Green Bean Recipe: Skinny Green Bean Holiday Casserole
1 LB green beans
1 medium onion (chopped)
2 cups sliced mushrooms
1 1/2 cups chicken broth
3 tbsp all-purpose flour
1 tbsp extra-virgin olive oil
2 tbsp unsalted butter
3/4 cup bread crumbs
1) Boil green beans and salt in a large sauce pan. Cook 3 minutes uncovered over high heat. Drain and rinse with cold water. Add the beans to a large bowl.
2) In the same saucepan, heat the oil over medium heat. Add onion and mushrooms, season with salt, cook until browned Add mixture to the beans.
3) Melt butter in a small saucepan over medium heat. Add the flour and cook stirring (about 2 minutes) Gradually whisk in the broth and bring to a boil. Add the onion and mushroom and 1 teaspoon of the thyme. Lower the heat and cook until thickened, stirring occasionally, for about 5 minutes. Pour over the green beans and stir to combine evenly.
4) Spray a 2-quart glass baking dish with cooking spray. Add the vegetable mixture to the baking dish. Sprinkle with bread crumbs. Bake uncovered until breadcrumbs are golden brown, about 20 minutes.
